You dredged it pre smoke? And then moved it from smoker into the fryer? Interesting. I’ve seen smoke to fry but I think usually it’s coated after it’s smoked but may be wrong in this.

Try smoking wings then flash frying them to crisp them up. It’s the best wings I have ever had by far.

I love smoke frying but I don’t bread them. I smoke them around 200 for like an hour and a half, then fry to crisp the skin. I love it

We used to smoke thighs and wings, then use the fryer to heat them for service. No breading though. They were a hit.

There was a place in Buffalo near my house that did smoked then fried chicken wings (Buffalo wings to the rest of the world lol). They were AMAZING. They sadly went out of business because their location was terrible. I miss those wings. I gotta fire up my smoker and fryer and make a batch myself.

Wow. Amazing. Is it worth the effort? Seems like too much work. I only smoke chicken thighs if im smoking meat, I’ll throw those thighs in the smoker too. Otherwise, I’ll just grill them.
